With over 15 years in the wine and spirits industry, this consignor is a bonafide whisky enthusiast. He is a certified sommelier who has served as a wine and spirits instructor, brand ambassador for several renowned whisky brands in Toronto, and manager of a fine wine and spirits store in Vancouver. Currently, he manages private whisky collections. The bottles in his collection were purchased across Canada, Newfoundland to Victoria, except for some bourbon form the US and a few high-end bottles of whisky from Scotland. He remembers buying the first bottle in October 2008 in Calgary. A pristine collection, that was stored, upright, in wooden cabinets behind closed doors in his basement for 10 years. The four years prior to coming to Iron Gate saw the bottles in closed hard plastic storage boxes in a secured temperature-controlled storage facility in the GTA.
This 35-year-old whisky is part of the 2017 Northern Borders Rare Collection drawn from some of the oldest Hiram Walker bonds. It’s a traditional Canadian whisky composed of corn whisky aged in ex-bourbon barrels blended with column and pot still rye aged in virgin oak barrels. Bottled at 50% alcohol. Limited availability in Canada with a very limited allocation in Europe and the US. "This whisky captures everything that could go right in an oak barrel. Creamy, rich and soft with a spicy frame. Beautiful caramel apple tones unite with the antique wood. Yet the years in oak don’t overpower like the business end of a Louisville Slugger. Rather it hugs you. The entire experience from nose to finish glows like a bright star. It may even signal the Three Wise Men to show up with gifts." - Blair Philips, Whisky Writer
